To be honest, it sounds like you have come from a place of misunderstanding of the scientific process. These last 18 months we have seen science in action as we never have before. We saw scientists learning about a literal new disease and we saw them change advice as their knowledge grew. This is exactly how science is meant to work. Only dogmatics don't change as they get new information.
As for the vaccines, they might be a relatively new technology to laypeople but that doesn't mean scientists started from scratch. The various vaccines approved for use have built on decades of knowledge of the immune system, viruses, and the technologies they use.
And as for long term effects, what do you expect to happen from 0.5mL of mostly carrier liquid injected into the muscle, and then absorbed, used or expelled once or twice? As I saw someone put it, worrying about the various vaccines causing long term issues is like worrying that the beer you had 10 years ago will cause liver cirrhosis.
No one is forcing anyone. You still have a choice to get the shot or not. But live with the consequences of that choice.
